Modified atmosphere packaging technology (map), also known as air exchange packaging, is to put food in sealed bags, extract air, and replace the gas environment in the packaging with selected gas, so as to inhibit the growth of microorganisms and prolong the shelf life of food. There are three kinds of gases commonly used in modified atmosphere packaging: C02, 02 and N2. CO2 can inhibit the growth of bacteria and fungi (especially in the early stage of bacterial reproduction) and the activity of enzymes. The bacteriostatic effect is better at low temperature and volume fraction of 25%, and it is water-soluble; The function of 02 is to maintain oxygenated myoglobin, make the meat colorful, and inhibit anaerobic bacteria, but also create a good environment for many harmful bacteria; Nitrogen is a kind of inert gas, which can not affect the growth and color of rotten meat.
In meat preservation, C02 and N2 are two main gases. The existence of a certain amount of 02 is conducive to prolonging the shelf life of meat. Therefore, an appropriate proportion must be selected for mixing. In Europe, the gas ratio of modified atmosphere preservation of fresh meat is 02: C02: N2 = 70: 20: 10 or 02: C02 = 75: 25. At present, the most effective fresh meat preservation technology in the world is the modified atmosphere packaging (CAP) system with high C02 inflatable packaging.
In order to preserve meat for a long time, the three gases must be kept in an appropriate proportion. The fresh-keeping effect of each gas on fresh meat is as follows:
(1) Oxygen can maintain the brightness of muscles. The oxygen in the mixed gas can keep the meat bright and red only when it is higher than 50%.
(2) Carbon dioxide is colorless and tasteless. It mainly plays an antibacterial role in inflatable packaging. It can inhibit the oxidative rancidity of meat and the growth of fungi.
(3) Nitrogen is widely used in inflatable packaging, with stable properties and no effect on meat color and microorganisms. Mainly used as filler.
